the shoulder is better than the leg, because you can stuff it full of rosemary and garlic, and the layers of fat produce better moister tastier lamb. Do not be put off by the hulking joint in the supermarket, buy a big one and you will be rewarded, serve with roast potatoes onions and peppers, or with harisa and couscous for novelty.
