Review

As with shoulder of lamb, as opposed to the leaner leg, the fattier cut roasts better. More fat, more flavour, lower cost. Massage your shoulder with a paste of much garlic, chilli, black pepper, salt, and olive oil, sprinkle the crackling with salt and more oil, and roast until well done. Leftovers, buy a large one, can be fried with eggs, or used as an interesting substitute in recipes requiring bacon(e.g amatriciana, carbonara).
