Despite the slightly off-putting fact that its American consumers tend to pronounce it 'bayzill', I'm still finding that, in my basic, if tasty pasta dishes, basil is still out-performing parsley while complimenting garlic with a subtle brilliance that mint and oregano (and don't get me started on the US pronounciation of THAT) can only dream of.

Rip a basil leaf, and your nose experiences seventh heaven. Combine basil, good ripe tomatoes and mozarella, and you have a taste / texture sensation that's unrivalled.

Basil is to Italian cooking what Dino Zoff was to Italian goal-keeping. Long may it grow on my windowsill.
