I am bored with the old flavours and methods. When did we become stuck with ideas like that food must not be burnt, that this must be mixed with that, that you put this in a cake, and fry with fat, and that one taste and not another is correct. I believe that this all current cookery is conservative and defunct. As with all other arts we must break out of old ways, and create a new school of cookery that accepts nothing from the past, that treats food as a subject for experiment without boundaries. Go into your cupboards and mix it all up. You may begin with an old recipe, like the cubists began with still lifes, but substitute the expected for the transgressive. Where flour is called for use minced beef. If it says 1 kilo, try 6 six kilos instead. Boil a banana. I look forward to tasting your results, what is the worst that can happen: people will laugh and it won't taste nice. Maybe the old tastes are just prejudices (remember when the English hated olive oil, and the French put cream and butter in every dish), The future is full of new horizons of stimulation. Go forward and create the new cookery.
