Boil 1 litre of full milk milk (yes! boil milk! careful now...)
Allow to cool slightly.
Mix in some spoons of greek yoghurt or cream - don't come here with your low-fat nonsense.
Mix in three spoons (no more, maybe less) of white distilled spirit vinegar.
Then magic happens - your bowl will now contain cottage cheese and watery, vinegary whey-ey stuff. Drain off the liquid (perhaps leave a little if not too vinegar - the aim is to prevent too much dryness).
Refrigerate your own cottage cheese.
