Eggs Norwegienne...? Eggs Benedict with a twist? Hot toasted muffins layered with fresh green spinach leaves, lemony home made hollandaise, golden runny eggs,poached to creamy perfection atop slivers of smoked salmon. Washed down with Portuguese holiday coffee made in a car boot find cafetiere. Things are looking up, last time we had this was the first time...and it was bacon not salmon.
