boil a brisket of beef in a casserole pot with carrot, onion, celery, bay leaf, peppercorns, salt, leeks or other winter vegetable. skim off scum in early stages. water should boil gently with beef soft after three hours.. eat with pickles, mustard,boiled potatoes, and some of the broth. satisfying.
